2 tablespoons olive oil 1/2 pound chicken tenders 2/3 cup barbecue sauce (recommended: Bullseye Original) Flour, for dusting surface 1 (13.8-ounce) package pizza dough (recommended: Pillsbury Classic) 3/4 cup shredded Gouda 1 cup shredded mozzarella 3/4 cup shredded Parmesan 1/2 medium red onion, thinly sliced 3 tablespoons chopped fresh cilantro leavesPreheat oven to 400 degrees F. Heat oil in a large skillet over medium-high heat. Add chicken tenders and saute until golden brown, about 12 minutes. Remove from heat. When chicken is cool enough to handle, dice chicken to yield a little over 1 cup. In a small bowl, toss chicken with 2 tablespoons barbecue sauce. Set aside. On a floured surface, roll out dough and place on a greased sheet pan. Shape to fill the sheet pan, about a 15 by 10-inch rectangle. Spread remaining barbecue sauce evenly over pizza dough. Sprinkle Gouda, mozzarella, Parmesan, onions, and chicken over top. Bake for 20 minutes or until cheese bubbles. Sprinkle with chopped cilantro and cut into pieces. |

BBQ Chicken Pizza
So it has been awhile since I have posted a recipe, but I think I am going to get back into it. I LOVE LOVE LOVE California Pizza Kitchen BBQ Pizza. In fact, right after I gave birth to Kelton I ate a WHOLE small pizza all by myself because I visualized it during my labor and delivery. It seems like I am making this recipe every couple of weeks and it reheats so well. YUM! Enjoy!

Secret Chocolate Chip Cookies
Preheat Oven to 350 degrees
Mix the following ingredients together
1 Cup Butter
2 Eggs
1 tsp of Lemon Juice
2 tsp of Vanilla
Add
¾ Cup packed brown sugar
¾ Cup sugar
¼ tsp cinnamon
½ tsp of salt
1 ½ tsp baking soda
½ cup of oatmeal
2 ½ cup of flour
2 cups of chocolate chips
Bake for 9 minutes (4.5 minutes on bottom rack/ 4.5 minutes on top rack)
FYI: It seems that the bigger you make the cookies the better they taste. We also like to take them out of the oven before they brown too much, so just keep your eye on them and remember they continue to bake a little on the cookie sheet after you pull them out.
This recipe was introduced to me by my sister Joann and is a favorite among my sisters. She bakes them whenever someone has a baby and brings them to the hospital. In fact my OBGYN stalked me for the recipe because they are sooo good! If you make them and they do not taste good...you did something wrong.
